Ingredients (serves 3):

Olive oil

Salt and pepper

3 chicken breasts, cut into 1″ pieces

3 tablespoons flour

3/4 cup apricot jam

1 garlic clove, minced

2 tablespoons soy sauce

1 and 1/2 tablespoons brown sugar

Chopped chives, for garnish

Method:

  1. Toss the diced chicken with salt and pepper. Sprinkle the flour all over and toss well until all the chicken pieces are coated.
  2. Heat a large frying pan over medium heat and add the olive oil. Add the chicken in a single layer. Cook until browned on each side, about 5-6 minutes per side.
  3. Whisk together the jam, minced garlic, soy sauce and brown sugar until combined. Once the chicken is brown, pour the sauce over. Stir to coat well. Simmer for 2-3 minutes, so the sauce thickens.
  4. Garnish with chives.

Serve with broccoli and rice.
