
Ingredients (serves 3):
Olive oil
Salt and pepper
3 chicken breasts, cut into 1″ pieces
3 tablespoons flour
3/4 cup apricot jam
1 garlic clove, minced
2 tablespoons soy sauce
1 and 1/2 tablespoons brown sugar
Chopped chives, for garnish
Method:
- Toss the diced chicken with salt and pepper. Sprinkle the flour all over and toss well until all the chicken pieces are coated.
- Heat a large frying pan over medium heat and add the olive oil. Add the chicken in a single layer. Cook until browned on each side, about 5-6 minutes per side.
- Whisk together the jam, minced garlic, soy sauce and brown sugar until combined. Once the chicken is brown, pour the sauce over. Stir to coat well. Simmer for 2-3 minutes, so the sauce thickens.
- Garnish with chives.
Serve with broccoli and rice.
Not being a meat-lover, I probably won’t be making this – but just wanted to say how nicely photographed it was! Worthy of a food magazine :).

Thanks for sharing this recipe. It’s the type that I can adjust to use soy for me, chicken for Mr Man. Saturday’s dinner sorted 🙂
