This is a great recipe for using up leftover veg – pretty much any combination will work. 🙂
Ingredients:
- One chicken breast per person
- Your choice of veg – onions, peppers, baby courgettes/carrots, cherry tomatoes, etc.
- 2 tablespoons dark brown sugar per person
- 1 tablespoon coarse grain mustard per person
Method:
- Preheat oven to 200 Fan/ Gas mark 6
- Brown chicken breasts in a frying pan/.skillet
- Add all chopped veg and fry gently
- Mix sugar and mustard together well in a bowl and then add to pan – it will look pretty unappetizing at this point
- Stir well and turn off heat
- Prepare a baking tray with enough tinfoil for separate parcels
- Add one chicken breast, veg mix and sauce to each parcel, then wrap carefully and seal all the edges
- Cook in the oven for 25-30 minutes.
- Serve with more veg and potatoes
We named this recipe after my mum, simply because she gave it to me. 🙂
