This is a great recipe for using up leftover veg – pretty much any combination will work. 🙂

Ingredients:

  • One chicken breast per person
  • Your choice of veg – onions, peppers, baby courgettes/carrots, cherry tomatoes, etc.
  • 2 tablespoons dark brown sugar per person
  • 1 tablespoon coarse grain mustard per person

Method:

  • Preheat oven to 200 Fan/ Gas mark 6
  • Brown chicken breasts in a frying pan/.skillet
  • Add all chopped veg and fry gently
  • Mix sugar and mustard together well in a bowl and then add to pan – it will look pretty unappetizing at this point
  • Stir well and turn off heat
  • Prepare a baking tray with enough tinfoil for separate parcels
  • Add one chicken breast, veg mix and sauce to each parcel, then wrap carefully and seal all the edges
  • Cook in the oven for 25-30 minutes.
  • Serve with more veg and potatoes

We named this recipe after my mum, simply because she gave it to me. 🙂
