Crispy Chewy Chocolate Chip Cookies

Ingredients:

2 cups (260g) plain flour

1/2 tsp baking powder

1/2 tsp salt

3/4 cup (170g) unsalted butter, melted

1 cup (190g) packed brown sugar

1/2 cup (100g) caster sugar

1 tbsp (15ml) vanilla extract (yes, this is correct, but feel free to use less if it seems too much)

1 large egg

2 cups (260g) chocolate chips (I used white chocolate chips)

Method:

  1. Preheat the oven to 165C/150Fan
  2. Lightly grease baking tray
  3. Sift together the flour and baking powder, set aside
  4. In a medium bowl, cream together the melted butter, brown sugar and white sugar until well blended
  5. Beat in the vanilla and egg until light and creamy
  6. Mix in the sifted ingredients until just blended
  7. Stir in the chocolate chips with a wooden spoon
  8. Use a tablespoon to roughly measure out the cookie dough on the baking tray, leaving space between each scoop. I had 6 scoops on my tray
  9. Bake for about 15 minutes, or until the edges are lightly toasted.
  10. Cool on baking tray for a few minutes before transferring to a wire rack to cool completely
