
Ingredients:
2 cups (260g) plain flour
1/2 tsp baking powder
1/2 tsp salt
3/4 cup (170g) unsalted butter, melted
1 cup (190g) packed brown sugar
1/2 cup (100g) caster sugar
1 tbsp (15ml) vanilla extract (yes, this is correct, but feel free to use less if it seems too much)
1 large egg
2 cups (260g) chocolate chips (I used white chocolate chips)
Method:
- Preheat the oven to 165C/150Fan
- Lightly grease baking tray
- Sift together the flour and baking powder, set aside
- In a medium bowl, cream together the melted butter, brown sugar and white sugar until well blended
- Beat in the vanilla and egg until light and creamy
- Mix in the sifted ingredients until just blended
- Stir in the chocolate chips with a wooden spoon
- Use a tablespoon to roughly measure out the cookie dough on the baking tray, leaving space between each scoop. I had 6 scoops on my tray
- Bake for about 15 minutes, or until the edges are lightly toasted.
- Cool on baking tray for a few minutes before transferring to a wire rack to cool completely
