The Boy’s Chocolate Chip Cookies

On the final day of half term, a Monday, The Boy made these cookies to take in the next day for his class mates. They are delicious but very chocolatey. 🙂

Ingredients:

250g butter, softened

350g light soft brown sugar

2 large eggs

350g self-raising flour

100g cocoa powder

200g chocolate chips

Method:

  1. Beat the butter and sugar together in a bowl until light and fluffy, then beat in the eggs one at a time. Sift the flour and cocoa powder into the batter and fold together. Fold through the chocolate chips.
  2. Heat the oven to 190C/170C Fan/Gas Mark 5. Place evenly spaced spoonfuls of the mixture on baking trays, allowing 1 tablespoon for each cookie.
  3. Bake for 15 minutes until spread out and crusty around the edges. Leave to cool slightly before removing them from the baking tray.
  4. Recipe makes about 24 cookies
