
On the final day of half term, a Monday, The Boy made these cookies to take in the next day for his class mates. They are delicious but very chocolatey. 🙂
Ingredients:
250g butter, softened
350g light soft brown sugar
2 large eggs
350g self-raising flour
100g cocoa powder
200g chocolate chips
Method:
- Beat the butter and sugar together in a bowl until light and fluffy, then beat in the eggs one at a time. Sift the flour and cocoa powder into the batter and fold together. Fold through the chocolate chips.
- Heat the oven to 190C/170C Fan/Gas Mark 5. Place evenly spaced spoonfuls of the mixture on baking trays, allowing 1 tablespoon for each cookie.
- Bake for 15 minutes until spread out and crusty around the edges. Leave to cool slightly before removing them from the baking tray.
- Recipe makes about 24 cookies
