This recipe and accompanying photos first appeared on the much-missed Paper Turtle blog and has been tweaked by me. 🙂

Ingredients:
500g beef mince (I used 5% fat)
1 onion, chopped
1-2 courgettes (zucchinis), diced into small pieces – optional (I didn’t have any)
400g can of tomato soup, condensed (I used Heinz Cream of Tomato, because that’s what was in the store cupboard)
400g passata (I subbed this for a largish portion of hidden veg in tomato sauce, which I had in the freezer)
1 beef Oxo cube, crumbled
large sprinkle of Italian Seasoning
4 cups of water
1 teaspoon garlic salt
salt and pepper, to taste
8 lasagne sheets, broken into small pieces, uncooked
Method:
Combine the ingredients in the slow cooker (apart from the beef mince).
Add the mince to the top of the mixture (I browned the mince first).
Cover, cook on low heat for 7-8 hours, or on high for 4-5 hours. (I gave my 7 hours)

Serve in a bowl with a generous dollop of ricotta cheese and a handful of grated mozzarella. I added garlic bread as a side, but I think that beer bread would also work well with this. 🙂
Serves 5 (three portions for supper and two portions for the freezer.)
This does look like a very hardy meal & I think Mr Man would enjoy very much. Next to book recommendations, food recommendations are my favourite!

Thanks for sharing! This looks like a good thing to make for the family. I really like crock pot meals so I don’t have to spend all. my time in the kitchen when the gang’s all here!

Oh, that looks so yummy! Robbie actually made a lasagna a few weeks ago, but I’m going to show him this & I’ll bet he’ll want to try it out, too. 🙂
