There’s still 1 kg of self-raising flour in the pantry cupboard … I have my fingers crossed that on the next visit to the supermarket, I will be able to restock. The flour shelves were completely bare on my last visit.
Ingredients:
1/2 cup of butter, room temperature
1 cup of white sugar
juice and zest of one lemon
2 eggs
1 and a 1/2 cups of self-raising flour
1 teaspoon baking powder
generous pinch of salt
1/2 cup of milk
1 cup blueberries, fresh or frozen
Method:
Heat the oven to 160C Fan. Grease a loaf tin.
Mix part one: cream the butter and sugar together until fluffy. Mix in the lemon juice, zest and eggs,
Mix part two: Stir in the flour, baking powder, salt and milk until the batter is mixed. Gently fold in the blueberries.
Pour batter into the loaf tin. Bake for about an hour – the top should bge golden brown and spring back when you touch it.
Allow to cool. Slice. Enjoy.

That looks a good one to try. I have been told that some of the baking product shortages is caused by package issues. I have bought a 16kg bag of flour from Amazon. I bought plain because I can always add baking powder to make SR. I have also bought 10kg of caster sugar in the same way (same price as Tesco). I have shared some with friends. Worth a thought.

I did look at purchasing flour from amazon, but to be honest, I don’t have space to store a 16 kg bag and I’m not sure that I want to make that much bread and cake!
On my last visit to the supermarket, I was able to stock up on 1.5 kg each of self-raising and plain flour, so I’m set for a while.
This Lemon Blueberry loaf is delicious – I’ve made it twice now. 🙂

That looks delicious and well worth using up some of your precious flour! I’ve noticed that flour is gradually reappearing on the shelves and I don’t feel so concerned about using it up now.
You’ve already enticed me into cooking beer bread and we had that delicious chicken and asparagus dinner you blogged about last night – clean plates all round! So now I am going to have to try this cake too to make it three out of three!

Another delicious sounding recipe. Like Deb we have tried the Beer Bread (yum) & the chicken (soy) pasta (yum), so I’m sure this loaf will be a winner. My frozen veg & fruit order will be ready for pick up next Monday, I’m adding blueberries to it. I wonder if substituting cranberries for blueberries would work? For us this side of the pond, it’s yeast that’s the hardest to find, I’ve been trying for over a month to get some, hence why I think the craze for sourdough starter is about.

I used fresh blueberries and they worked fine. I’m think of trying it with raspberries next. 🙂
